Holiday Cranberry Mousse

This is the best tasting dessert entre!  Wow…I love this, even though it probably isn’t the healthiest dessert in the world.  We’ll just ease up on the diet a little bit and enjoy the fellowship with family, friends and good food at least once a year.  It doesn’t mean you can just eat way more than your body needs to function…it just means, you can take away the guilt for eating this dessert made with jello (which has a lot of sugar in it)  Oh well, one time a year…enjoy!                                                              Cranberry Mousse–                                                                                                                                                                                                                                                 1 package (6 ounces) strawberry-flavored gelatin ;  1 cup boiling water ;  1 can (20 ounces) crushed pineapple ;  1 can (16 ounces) whole-berry cranberry sauce ;  3 tablespoons lemon juice ;  1 teaspoon grated lemon peel ;  1/2 teaspoon ground nutmeg ;  2 cups (16 ounces) sour cream ;  1/2 cup chopped pecans                                                                                         In a large bowl, dissolve gelatin in boiling water.  Drain pineapple, setting the pineapple aside and adding juice to gelatin.  Stir in cranberry sauce, lemon juice, peel, and nutmeg.  Chill until mixture thickens.  Fold in sour cream, pineapple and pecans.  Pour into a glass serving bowl or an oiled 9- cup mold.  Chill until set, at least 2 hours.  Yield:  16-20 servings        This  is a delicious and pretty fruity salad dessert for the holidays, but it’s so good, you probably will serve it at other times, too.  This is wonderful served with a traditional turkey dinner during the holidays.  A warm thank you to Helen Clement, Hemet, California for the recipe!  This is truly a winner.
